I knew I should have checked the garden when we got home from camping Sunday! I've been watering, but with the drip lines, I haven't actually had to go in the garden to do that. But yesterday I had a hankering for tabouli, so in I went to "shop." Those sneaky zucchini; they blow up overnight! But I really don't mind, because those biggies are perfect for some of my favorite recipes, like this one:
Best zucchini bread ever! Although I shared the recipe here, I made it a bit healthier yesterday and it's JUST as good, so here's the latest incarnation:
Beat together –
3 eggs
3/4 c. oil
1/4 c. applesauce
1 2/3 c. sugar
2 t. vanilla
Mix in –
3 c. grated zucchini
Stir together –
3 c. whole wheat pastry flour
1 t. each – salt, baking soda, baking powder and cinnamon
– and stir into wet ingredients. Then add –
1 c. walnuts
1 c. dried cherries
1 c. chocolate chips
Makes two dozen muffins or two loaf pans. Bake at 350 degrees, 25-30 minutes for muffins; 1 hour for loaf pans.

I regularly provide "treats" for the chickens since they don't get to free-range. Perch gets her share even though she does free-range, and I often serve it to her. Yes, she's special. ;-)

Yum! I am definitely going to try that bread!!! And oh, no bulgar and quinoa instead... now this is another one I'm definitely going to try. I've never been a big fan of bulgar but I do like quinoa! Thanks bunches Michelle for participating in my Patisserie Tuesday as well! Hopefully, see you at next month's Patisserie Tuesday (the first Tuesday of each month).

I hope you counted your fingers, after Perch's snack...! I am going to try a GF zucchini bread - although I do like the ideas of muffins better, since you have to refrigerate or freeze GF baked goods shortly after making them. Quinoa tabouli! You are the best!
We dry the big zucchinis, we peel and gut them first. They are great in soups, they taste great and are a healthy noodle alternative.
