An all-pie supper

We had quiche "pie" and peach pie tonight, thanks to my MIL's pie-crust making efforts. (Do not send me your fool-proof pie crust recipe. I can ruin them all - and get frustrated trying.) For the quiche filling, I used cheese, milk and garlic from the frig, eggs from our hens, and onion, eggplant, zucchini, yellow crookneck and basil from our garden. It was excellent! Peaches from our usual source ("Canadian Harmony" variety) aren't ripe yet, but in honor of my MIL's visit, we bought some at the farmer's market ("July Flame;" very tasty!). This peach pie is to die for - it's made with fresh, sliced peaches and a peach puree sauce - kind of like fresh strawberry pie without that nasty plastic glaze. We supped like royalty - and polished off both!

That's it for now from . . .

Where are the recipes? You can't not give us the recipes! :)
As for the pie crusts, the frozen section at the local grocery store has me covered.

Both those pies look sooo good! I'm not very good at pie crusts either, though I did finally find one I can manage. I promise not to give it to you though. :)

Okay Michelle - I'm not going to be as "good" as your other friends because I'm going to give you a recipe and it is truly wonderful.

SIMPLE PIE CRUST
1.5 cup flour
1 tsp. salt
1.5 tsp. sugar
1/2 cup oil
2 tbsp. milk

Put all contents in the pie pan and mix - pat in to place. Bake w/ pie.

HOW SIMPLE IS THAT?!

Okay, Joan, that IS unique and I am going to have to try it. If it actually works for me (the big caveat! :-) I'm going to have to find you at OFFF and give you a great big hug!

Oh, those pies look delicious! I've actually been craving them, but with the heat wave we're in I don't want to warm up the house with the oven. Can't wait for fall!!!

As for pie crust, I finally have a recipe I like. My mother-in-law gave it to me. However, even though the recipe's simple, what finally clinched it for me was just being there while she made it. Then I felt the dough. Good pie dough should feel silky and soft and be easy to manage. NOW that I know what it feels like, I can tell when my dough is just right, regardless of the recipe. It's the whole "riding the bike" thing. :)
