This morning first thing, Brian went out to check his garden. Shortly he came running in, proclaiming that he had a BIG zucchini. I told him to go ahead and pick it. He actually found two, and asked if I would make him zucchini patties "right now," for breakfast. As you can see, I made my boy very happy.
Since this is one of the zucchini recipes a reader requested, I have included it below. In parentheses are this morning's variations; I don't get too hung up on following recipes exactly when it's not critical. :-)
Zucchini Patties
3 cups grated zucchini (I eyeballed it, using all of the larger zucchini)
1 cup Bisquick mix (I used instant buttermilk pancake mix)
2 eggs
1 cup grated cheese (I used medium cheddar)
1/2 cup grated onion (I used 1 tablespoon onion powder, and also 1 teaspoon garlic powder)
1 teaspoon Accent
1 tablespoon G. Washington broth (I used more than 1 tablespoon McKay's Veggie Chicken Seasoning)
salt to taste (didn't add any because of the extra McKay's)
Combine all ingredients and mix well (I used the dough hook on my Bosch). Fry in a skillet until golden brown and serve.

We use almost the same recipe, except we tend towards parmasean cheese instead of cheddar. You can seem to use less cheese that way and still have flavor appeasing both the palette and the Dr.
One more month left in the growing season and our zucchinis still haven't achieved the size of pickles. I'm headed to the farmers market on my way to work in the morning - need some real garden squash. I guess we are just too high.
After a trip to the ER my mother found she was allergic to seafood...but loves it. I found a zucchini crab cake recipe on the net which is close enough to make her happy without the ER visit. Now I will have to try yours. Thanks
Michelle, I made the Zucchini patties for supper tonight. Bob is a carnavore, but he loved them and did not even notice that there was no meat in our dinner. I spread mine with FF sour cream and it was delicious. I used reduced fat Bisquick and low-fat cheese, so they were healthier and still yummy! Thanks for the recipe. I wonder if you could pour this mix into a cake pan and bake it sort of like a fritatta?
I made these for lunch useing your Zucchini patties recipe,,,we ate them as they came out of the skillet! My husband avoids vegetables, but he really liked these. I will make them again.
